Want to Bake With Girl Scout Cookies?

Got Girl Scout Cookies? Want to bake with them?

The Patriots Trail Council's (Now part of the Eastern Massachusetts Girl Scout Council) 3rd Annual Cookie Creations event was held on February 5.
Boston's favorite pastry chefs created delicious desserts with our favorite Girl Scout Cookies, as a fundraiser for the council.

The 2008 winners were:
Crowd Favorite: Skipjacks
Judges' Favorite: Chatham Bars Inn

Here is one of Skipjacks' recipes:

Dark Rum Chocolate Truffles with Cinna Cinna-Spin Centers
Makes about 35 Truffles

10 oz. semisweet chocolate
1 cup heavy cream
3 tbl. butter, cut into cubes
¼ cup dark rum
1 box Cinna-Spins, ¾ rough chopped, ¼ ground into crumbs
½ lb. coating chocolate, melted

Have chocolate ready in a mixing bowl.
Bring cream to a boil and pour over chocolate and mix gently together till melted.
Add butter stirring into mixture till melted.
Add rum and mix in. Note, do not over mix, it will turn grainy.
Allow to come to room temperature.
When the mixture is quite thick and cooled, fold the rough chopped cookies into truffle mix and refrigerate
over night.
Scoop mixture into ¾” balls and roll to a round shape.
Roll and coat in coating chocolate and then sprinkle with cookie crumbs.
Keep cool till ready to serve.
